DC has a new taco king! We tried an assortment of tacos from Apapacho in Union Market and they were outstanding! “Apapacho,” a term of Nahuatl origin, means “a loving pat or embrace,” which is ironic because I assaulted the tray of tacos. It was opened last August by husband and wife Alam Mendez and Elisa Reyna, both from Mexico, and showcases their love of their native street food. Perhaps most impressive is that they use heirloom maize and perform the nixtamalization – soaking, cooking, washing, and hulling – the maize in house, which explains why their tortillas are so darn good.
