There is no shortage of pizzerias in the DC area and over the years I may have tried them all. I prefer a Neapolitan style pizza and the best representation of that is found at Etto on 14th Street in Logan Circle. It is a small restaurant with a small menu, but well worth the wait. They make much of their ingredients in house, including their vermouth for negronis, vinegars for salads, and reportedly even mill their own flour for their pizzas. What I can confirm, though, is that the pizza cooks in about six minutes in their Italian wood fired pizza oven and tastes as delicious as if you were in Naples.
